The best pancakes in the world

Even though I'm allergic to dairy, soy, wheat, and eggs, I love pancakes. And, tbh, my Dad has perfected them, so I thought I'd tell you the secret. The key is a great mix and a great egg substitute.

So many allergy free pancake mixes don't have the right texture, or taste, or don't keep well. These are super fluffy, have a nice crust, and aren't too sweet.

Just Egg is, well, just like egg. 3 tablespoons are the same as an egg, so really easy to use.


We make a huge batch of these and keep the extra ones in ziplock bags in the freezer. Pop them in the toaster for a delicious breakfast!


Special toppings, like safe chocolate chips, or frozen blueberries, make them extra special. Give it a try and tell me what you think.

That was such a fun read. It’s interesting how finding the perfect pancake recipe is a lot like preparing for an exam you need the right mix of patience, practice, and balance.
